Love Me Some Bars...


This fall I have been busy thinking of snacks to pack in my girls' lunches, after school munchies, and on-the-go belly fillers. Here are three of my favorite bar recipes which have become family favorites. Quick, easy, and deeply satisfying.

1. Nut-Free Paleo Chewy Granola Bars thanks to ThePaleoMom. These are so scrumptious with highlights of sweetness from dried cranberries and mini chocolate chips. Packed full of protein and nutrients, they are also great because they are nut-free which is key as a lunch-box staple in our nut-free school. Here is a link to the recipe.

2. Coconut Bliss Bars. I honestly can't remember where I found this recipe years back. It is a sweet, easy treat with only 4 ingredients! These are great for nut-free zones as well.

4 eggs

2t vanilla

4 c shredded coconut

1/2-1 c chocolate chips!

Mix eggs and vanilla. Add in coconut and ch. chips. Put in pan. Bake at 350 for about 15-20 minutes or until edges are golden brown.

3. Peanut Butter Babies. This recipe was inspired from Health Home Happy. I use only 4 ingredients again! Here is a link to the recipe. Instead of coconut cream, I used chocolate chips. I also add a splash of vanilla from time to time.
